Lamb shanks casserole

Serves 2-3

Preparation time - 20 minutes
Cooking time - 1 hour

Here's a winter-warmer recipe if ever there was one! Delicious slow cooked lamb shanks with aromatic spices to warm the coldest of nights (and hearts!)


  • 6 lamb shanks
  • Plain flour for dusting
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 cup red wine
  • 1 tin chopped tomatoes
  • 1/2 bunch fresh thyme
  • 2 teaspoons chopped chilli
  • 1 tablespoon tumeric
  • Salt and pepper to taste


  • Dust the lamb shanks in flour
  • Heat 1 tablespoon of oil in a saucepan and brown the shanks, turning frequently; put aside
  • Heat the remaining oil in the pan and brown the onions and garlic
  • Add the celery and carrot and stir-fry for about 5 minutes
  • Add the shanks, wine, tomatoes, water, chilli and herbs; simmer on low for about an hour
  • Season with salt and pepper and cook for another 10 minutes
  • Serve with creamy mashed potatoes, or soft polenta
